Vincent Broggi

Vincent Broggi is the 2023 French Sushi Champion and, in 2024, was crowned World Sushi Champion at the World Sushi Cup® Japan 2024 in Tokyo.

Vincent Broggi discovered his calling as a chef later than most. Initially enrolled in business studies that failed to inspire him, he decided to leave everything behind and submitted his résumé to a well-known sushi franchise. He quickly became immersed in the craft and developed a deep passion for Japanese culinary artistry.

Eager to create his own dishes, he launched his first pop-up in Biarritz, before embarking on extensive travels to gain experience and find new sources of inspiration. He refined his sushi skills in Denmark and Sweden, before becoming a consultant himself in Madrid. He later worked in the events sector in Saint-Tropez, cooking privately in clients’ homes.

In 2022, he entered the French Sushi Championship for the first time, finishing fourth. Energized by the experience and driven to surpass himself, he returned in 2023 and won first place. He did not stop there, going on to become World Sushi Champion in 2024.

Shortly thereafter, Vincent Broggi settled at the Cité de la Gastronomie et du Vin in Dijon, where he opened his own pop-up store. Working solo, he focused more on precision and detail than on volume. He later left Dijon to open another pop-up in Paris in August and September 2023. His unconventional approach to sushi blends diverse influences and plays with both textures and colors.
