Jean-Philippe Walser

Jean-Philippe Walser is a pastry instructor and World Champion in croquembouche.

Originally from Lorraine, he began his professional journey in 1982 with a two-year apprenticeship. Driven to refine his technique and deepen his knowledge, he earned a Master Craftsman certificate in pastry in 1990, confirming his commitment to artisanal excellence.

He then expanded his experience in several pastry houses in Alsace before returning to work in his home region. He quickly turned to teaching, a role he held for nearly 32 years. This long career as an instructor allowed him to pass on his expertise to several generations of professionals and passionate learners.

Alongside his teaching career, he took part in numerous competitions. The Chef won the title of Vice-Champion of France in croquembouche twice, before ultimately earning the title of World Champion in croquembouche (First Prize – International Croquembouche Competition 2002). These achievements marked a major turning point in his career and contributed to his professional recognition. This distinction opened the door to many masterclasses, notably alongside Stéphane Glacier.

An entrepreneur as well, he later co-founded a publishing company with Jonathan Mougel, releasing their first book together, “W Wedding Cakes Wedding Croques”, continuing his commitment to sharing knowledge and promoting the craft.

Today, Jean-Philippe Walser continues to pursue his passion through training programs in leading schools in France and internationally, sharing his signature creations: wedding cakes and croquembouches, where technical precision, craftsmanship, and aesthetics come together.
