Vincent Broggi is the French Sushi Champion, 2023.
Vincent Broggi discovered his vocation as a chef late in life: he gave up the business studies he was pursuing and for which he had little interest in. Shortly after, he submitted his resumé to a famous sushi franchise. He quickly fell in love with the Japanese culinary art.
Aspiring to make his own creations, he launched his own pop-up in Biarritz, before travelling extensively to gain experience and find new sources of inspiration. He perfected the art of sushi in Denmark and Sweden, before becoming a consultant in Madrid. He then worked in the events industry in Saint-Tropez and cooked for private clients.
In 2022, he tried his luck at the French Sushi Championship and placed fourth. This galvanizing experience inspired him to persevere and outdo himself.
In 2023, he entered the competition again and finished first.
The new French Sushi Champion didn't stop there and reached the final round of the World Championship in 2024.
Vincent Broggi took up residence in Dijon's Cité de la Gastronomie et du Vin, where he opened a pop-up store. He worked alone, focusing more on detail than quantity. He then left Dijon to open a new pop-up store in Paris in August and September 2023. His unconventional approach to sushi blends diverse influences, plays with textures as well as colors.
